Chicken wings are near and dear to my heart. While I enjoy smoking pork butts and ribs every now and then chances are that if you were to drop in on me at a random time you will most probably catch me grilling wings.
My method of cooking wings is pretty simple. I coat the wings with peanut oil and then season with salt and pepper. The wings get cooked directly over the charcoal using a few GrillGrate panels.

The GrillGrate panels keep the wings from burning and vaporize a lot of the dripping grease for some delicious smelling smoke! After about 10 minutes I flip the wings to get the skin side crispy.
After another ten minutes I flip the wings again. I let them cook for another 10 minutes before they get sauced. This method gets the skin really nice and crispy.
I decided to sauce these wings with Sweet Baby Ray's Wing Sauce. Hey...it was made for wings so there is a chance that it was going to be good!
I dunked the wings in the sauce and got them back on the grill for another 5-10 minutes. The sauce gave the wings a pretty color.
After the sauce had set the wings had darkened slightly and were just about ready to eat! I say just about because if you eat them straight off the pit like I used to do you will end up scorching the roof of your mouth. It hurts when that happens.
The Wing Sauce from Sweet Baby Ray tasted okay but not great. You can see on the label above that this sauce is pretty much cayenne pepper and vinegar and while those are essential ingredients in a proper wing sauce they should not be the only flavors. I like a little bit of sweet from some honey or even some Asian notes from fresh ginger and garlic.
I will use this sauce again but only as a base. It is okay as it is but could easily be doctored up into something amazing with a little effort.
