Yeah, I still have some of those corn tortillas sitting around the house. After I smoked up a beautiful tri tip roast I simply had to use them to make some spectacular Tri Tip Tacos!
I started off with a beautiful 2.2 pound tri tip roast. There really wasn't any fay cap on this roast so no trimming was needed.
I seasoned the tri tip with some salt, pepper, garlic and a few aromatics. Slow smoked this guy for about 90 minutes until an internal temperature of 140F was hit.
Beautiful color and aroma! The tri tip roast looked delicious as soon as I sliced it up!
Broke out the corn tortillas and made some tacos! I went with a base of refried beans topped with the sliced tri tip. Added some avocado slices, shredded cheese, sour cream and salsa.
Simple and delicious! I ate these tri tip tacos on my patio with an great with an ice cold beer. It made for a nice early dinner :)
