Here is an idea that worked out pretty dang well on my grill. I hope you get to try this recipe someday!
I started with some large red potatoes and cut them into wedges.
Each wedge was wrapped in one piece of thick sliced bacon. The bacon was secured with a toothpick and dusted with some chili powder.
You need to go with thick cut bacon. If you use the thin stuff the bacon will be done way before the potatoes finish cooking.

I grilled these with indirect high heat for 30 minutes. The potatoes were turned about every 7 minutes so the bacon would crisp evenly. They come out looking pretty nice!
You could stop right there and eat these straight off the grill. I decided to keep going and make these extra special.
The next step was to drizzle the bacon wrapped potatoes in honey for a little sweetness and shine.

I sliced some of these up and loved the crunchy, sweet savoriness of the bacon blending in with the softness of the hot potato!

I decided to take some of these a step further. I sliced the bacon wrapped potato wedges into bite sized portions then added slices of pickled jalapenos and shredded cheese.
The bacon wrapped potato bites were an absolute hit! We will be making these again and I hope you get to try them as well!
